After the end of the summer, it was time to prepare pickles. In winter, these delicious jars are a good source of vitamins and have become a classic for every table in Bulgaria - from November until March and April. In the cold months, the winter provides us with the perfect appetizer for brandies and red wines.
Here we have collected three classic recipes for making pickles. Here they are:
Royal pickle
Necessary products for one jar: 1 tsp salt, 3 tbsp. sugar, 2 crushed aspirin, 1 tsp. apple cider vinegar, cauliflower, cambi or red peppers, tomatoes, carrots, celery, cabbage (optional)
Method of preparation: The salt, sugar, aspirin and vinegar are mixed and placed on the bottom of the jar. Top tightly with cauliflower, chopped cambi, carrots, celery, cut into four green tomatoes, celery, and chopped cabbage of your choice. Fill the jar with cold water, close and shake well. Royal pickles are not sterilized.
Appetite
Necessary products: 6 kg of peppers, 6 kg of tomatoes / 2 jars of tomato paste, 400 g of chorbadji peppers, 2 bunches of parsley, 3-4 heads of garlic.
For the marinade: 2 tsp oil, 3 tsp. vinegar, 3 tsp. sugar, 5 tbsp. sol
Method of preparation: Roast the peppers and cut them. Tomatoes are boiled and mashed, and peppers are cut into circles. The marinade products are mixed and boiled. Put the roasted peppers in it, after 15 minutes the peppers, and after another 15 minutes - the tomato puree. Last add the garlic and parsley after another 10 minutes. The appetizer is poured into jars and sterilized for 15 minutes.
Pickles
Necessary products: 600 g cucumbers, 1 tbsp. salt, 1 tbsp. sugar, 50 ml of vinegar, 5-6 grains of black pepper, 1/4 onion, dill
Method of preparation: Cut the onion into slices and arrange them together with the spices at the bottom of the jar. Wash the cucumbers and arrange them tightly in the jar. Add the vinegar and add water to the rim of the jar. The jars are closed and sterilized for 5 minutes. Cool and store in a dark and ventilated place.
