Ruby is a red hybrid red grape variety obtained by crossing nebiolo and cheese varieties. He was selected in our country.

The ruby is easily recognizable. It has a medium oval, five-part leaf whose surface is smooth. The handle is short, smooth, painted red. The color is bisexual. The bunch of ruby is of medium size. It looks like a cone. Its handle is tough, relatively long and thick. The ruby grain is not very large. It is rounded and colored in dark blue. The meat is juicy and with a balanced taste. It is covered with tough skin, which contains pigment and tannins.

It grows successfully on hilly areas and needs deep and fertile soils. It is believed that this variety is not very cold-resistant. If the vines grow in a favorable environment, strong growth is observed. In September, the grapes must be harvested. The time of picking should be carefully planned, as the grapes quickly accumulate sugars, but easily lose acids.

The yield is average, with a decare of just over 1000 kg of grapes. A positive feature of the variety is that it withstands rot and does not crack. Ruby forms sugars up to 25 percent. When the beans are raisined, the sugar content reaches up to 30 percent. It produces dessert and table wines, the quality of which cannot be overlooked.

History of the ruby

Ruby is among the interesting and popular varieties. This variety was created in our country and in particular at the Institute of Viticulture and Enology in Pleven. It was obtained after crossing the varieties Nebiolo and Syrah (Shiraz) in 1944. However, ruby began to enjoy great popularity only after the 50s.

At that time he received the recognition of the State Variety Commission. It is distributed mainly in the Plovdiv region. There were also small plantations in the region of Ivaylovgrad. To date, we enjoy significant plantations scattered throughout the country. Rubin is gaining more and more fans and is even about to displace Mavrud from the place of the most accurate red local variety of the Bulgarians.

Ruby production

The production of ruby is a process that requires special attention. As already mentioned, you need to choose the right time for the grape harvest, as it quickly forms sugars, but also quickly loses acids. To make quality wine, you need to wait for the moment when the grains have partially withered. This gives a stronger aroma and makes it easier to extract material from the skins of the grain.

It is then subjected to various fermentation regimes. So it's time to mature the material. For this purpose it is placed in wooden barrels. They are usually made of oak boards. Malolactic fermentation takes place in wooden vessels, which is the result of the metabolism of lactic acid bacteria. The application of various vinification practices further improves the quality of the grape elixir.

Characteristic of ruby

This grape variety produces table, dry and dessert wines of distinctive quality. You will recognize the young and unripe wines by their rich ruby color. In addition, they are characterized by an aroma reminiscent of small fruits such as raspberries, cherries, cherries, mulberries, figs, raisins and raspberries. If the wine is grown in an oak barrel, other notes appear. In some species there is a faint aroma of vanilla, lilac and spicy spices such as black pepper.

Many manufacturers also use the addition of various herbs to improve the taste. Some wines may have a noble precipitate. Do you drink from ruby, you will immediately feel the freshness and density of the wine. The tight tannins are also impressive. When the wine matures, they begin to soften. Therefore, experts are of the opinion that connoisseurs should stop at wines that have matured for at least 5 years.

Serving ruby

The ruby is served in traditional wine glasses with a stool, thanks to which all the characteristics of quality wine are best revealed, including color, taste and aroma. And here is the rule that the vessel should not be filled to the top, but only to the middle. Although the wine is consumed with different dishes, it is good to serve a little earlier. As when serving, the temperature of the drink should be within 16-18 degrees. Drink slowly in small sips.

Otherwise the most suitable supplement for ruby are the red meats that so well complement the taste of the wine. Choose beef or beef steaks seasoned with aromatic spices, and you certainly won't go wrong. Among the perfect additions are Stuffed Veal Breasts, Veal Lockets with Lemon Juice and Veal with Peas and Rice. You can also combine the wine with Beef with quinces or with Roast beef. Lovers of dry appetizers combine it with different types of sausage.

Storage of ruby

The wine of the variety ruby is stored like most red wines. The most suitable places for this purpose are cellars, but of course, not everyone can have such a place in their home. That is why you should choose a room that is dark and where the temperature is within 15-18 degrees. The humidity of the air is also important, because at low humidity the cork, from which the cap of the bottle is made, shrinks and so oxygen enters the drink. This, in turn, will lead to a decrease in the quality of wine.

If for some reason you get wine that is not in a glass and dark bottle, immediately transfer it to one, because if the liquid stays in a light container, it changes color. When you have an open bottle and do not intend to consume the drink immediately, you can close the container with a rubber stopper. The quality of the wine will be maintained for about five days. With such a device you could easily get from a retail chain. Wine connoisseurs advise this drink not to be refrigerated, as this would not have a positive effect on its characteristics.
