Every year on October 15 is celebrated the day of the chicken Kachatore. Along with tandoori chicken made in India and Hawaiian chicken, the recipe, which has gained worldwide fame, is the Italian chicken Cachatore.

What is Kachatore chicken and what are its main ingredients?

Kachatore literally means hunter. So, if you have to explain the essence of the dish, in Bulgarian it would sound like a hunting stew with chicken. In different parts of Italy, the recipe includes different ingredients, but there are still invariable, which are the basis of the dish.

These are chicken, tomatoes, onions and garlic. In some regions, instead of white wine, they add red wine, include olives, mushrooms, and various spices, but this does not change the essence of the recipe for this chicken stew and keeps it incredibly tasty and liked by people with different culinary cultures.

The main processing of chicken meat is by frying. The subtlety of cooking meat is to fry it in olive oil over a moderate heat so that a golden crust is obtained and the meat remains tender.

The other ingredients for the dish are selected to taste, and in addition to the obligatory onions, garlic and tomatoes, peppers, marinated mushrooms, capers, carrots can also participate.

The spices are red wine, chicken broth, black and red pepper, curry, basil, parsley, salt, and as fat it is best to use olive oil.

Cooking Chicken Kachatore is the same as with any stew, and before it is allowed to simmer until the liquids evaporate and the stew thickens, the fried chicken is added.

When serving chicken Kachatore sprinkle with parsley, basil or rosemary to give the desired flavor to the whole dish.
