Canaiolo / Canaiolo / is a red wine grape variety that is widely grown in central Italy, especially in Tuscany. It is also found in Marche, Lazio and Sardinia. This variety is known by many names, including Cagnina, Vitis Vinifera Etrusca, Calabrese, Uva Donna, Canaiolo Nero Grosso, Raspo Rosso, Tindillaro, Uva Marchigiana, Caccione Nero, Uva Dei Cani, Uva Colore Canaiola, Canaiolo Cascolo and Uva Merla.
The leaves of canayolo are green, rounded, medium-sized. The clusters are also medium to large, cone-shaped, rather compact. The grapes are of medium size. Some may be larger. They are painted in dark blue to black and have an elastic smooth scale. Beneath it lies watery meat, which has a pleasant taste. It produces red wines with elegant aromas and a satisfactory presence of tannins.
History of canoe
Canaiolo is a variety that has been grown in Tuscany for centuries. That is why it is assumed that this is where its roots should be sought.
This variety has long been used in the production of blended wine Chianti / Chianti /, which is highly valued. In fact, this is the reason why canayolo gained popularity.
It is also known that in the eighteenth century, the share of canagiolo in chianti was much higher than that of sangiovese, which is also a very old and valuable Italian variety originating in Tuscany.
Part of the popularity of this variety is due to the fact that the risk of rot is almost negligible. This makes it suitable for longer fermentation.
In the nineteenth century, a recipe for chianti mentioned that cannaiolo was combined with sangiovese to add fruity tones and to soften the tannins of the other variety.
And although in the past the vine growers foretold a brilliant future for canoelo, today his destiny is at a crossroads. After an epidemic of phylloxera, the canyon massifs were severely affected and significantly reduced.
Wine producers in Tuscany are trying to restore the vineyards with this type of grape and regain its former glory.
Characteristics of canoe
Canaiolo wines have an attractive red color. They have a rich taste reminiscent of ripe strawberries. At the same time, there are hints of skin. In some cases, however, the aroma of the wine can be quite mild and even neutral.
This quality is used to soften other wines that have too high acidity and intrusive tannin content.
Wines containing canola can also have aromas reminiscent of violets, cherries, vanilla, warmed oak, chocolate. All this, complemented by a sweet elegant taste, turns the drinks into the perfect grape elixirs.
The wines in which this variety participates are characterized by freshness, long finish and indisputable finesse.
Serving canoe
It is advisable to chill before presenting the canoe wines to the table. If the respective wine is younger, you can stick to the temperature of 14-16 degrees. For more mature drinks, it is good to aim for a temperature of 16-18 degrees. Both young wines and old ones require to be presented in a special glass.
The most practical option is to use a classic red wine glass, which could be used in other red wines (such as Cabernet Franc, Carmener and Ruby), as long as they do not require a special vessel to reveal their specific feature. If you have to serve several types of wine in the evening, always start with lighter and younger ones.
In case the canola wine has matured, it is better to present it in the middle or at the end of the evening. When pouring the wine, do not fill the glass to the brim. Let's not forget that according to the label, it is enough for only half of the glass to be full of drink. Drink the wine slowly, in small sips. This way you will be able to really feel it and enjoy it.
Quality wine deserves to be combined with appetizing food. You can combine the Italian grape elixir with different types of cheese. Suitable dairy products include Parmesan, mozzarella, Fontina and Gouda. You can serve the cheeses on their own or include them in fresh salads.
However, if the wine was more mature, it would require a little heavier food. That's why you can bet on roast game. Among the specialties that will touch the fans of good red wine are French roe deer, roasted quail, jackdaw, stewed pheasant, wild boar skewers and stuffed rabbit.
However, not everyone can get game. That is why you can replace it with beef, beef or pork. Duck and turkey are also excellent options. According to the fans of this wine, its taste manages to harmonize with the help of lamb dishes, which are flavored with fragrant spices and sauces.
