Often, when it comes to cooking a seafood delicacy, many give up even saying the name octopus. It sounds so difficult and discouraging to prepare that there is no point in even trying. The truth is, however, that there are thousands of ways to make a fragile octopus. And to one they are not so difficult.

Each culture has its own tricks in the preparation of the sea animal. In Italy, for example, corks are put in the water in which the octopus is boiled. Others strike the cephalopod like a steak to make it more fragile.

However, there are a few facts that cannot be ignored. The octopus, like squid, is from the cephalopod family. They have one important feature - the more they cook, the tougher they become. Therefore, the methods of preparation are limited to a few.

First of all, the octopus should be cooked on a grill, hot pan or other, for a maximum of 2-3 minutes. On the other hand, it can be boiled, but the time will be long. Per kilogram of meat is given an average of 40-50 minutes. However, if the meat is overcooked, it becomes dry and tasteless.

One of the options for cooking octopus involves the presence of three pots of boiling water. The octopus is placed for 15 seconds in the first, then transferred to the second and finally to the third pot. He has to sit in each for 15 seconds. However, this option only applies to small octopuses.

You can boil a large octopus until ready in a little water. On average, it takes about 40 minutes. Boiled octopus can be breaded, fried or eaten with spices.

An octopus cooked for about 5 minutes stays tougher. This is how the octopus is prepared for sushi and salad.

Fragile grilled octopus

Necessary products: 1 octopus, 5-6 cloves of garlic, 1 glass of white wine, 1 stalk of celery, salt, pepper.

For frying: 2 tbsp. olive oil, 2 tbsp. chives, 1 tbsp. garlic.

Preparation: The octopus is divided into two. One part is placed in a saucepan with 300 ml of boiling water, garlic and celery. Boil for 40 minutes.

The second part of the octopus is placed in 200 ml of boiling water, a glass of wine, celery and garlic. Boil for 40 minutes.

Heat the olive oil in a deep frying pan. Add garlic and onion and fry for about 2 minutes. Add the cooked octopus. Cook on both sides for 3-4 minutes. Season with salt and pepper. It is consumed hot.
