The mish-mash is one of the greatest prides of our traditional cuisine. There is no more practical combination than that between onions, peppers, tomatoes, egg and cheese - products that can be found in every Bulgarian home.
The mish-mash recipe is passed down from generation to generation. Prepared with a solid amount of butter, it is blissful, fragrant and incredibly tasty.
In different regions in our country there are different variations for the preparation of mish-masha. Some replace cheese with cottage cheese, others mix the two ingredients, and still others use jar peppers. The only prerequisite for preparing a mish-mash is scalding and thorough peeling of tomatoes. Here you will find four of the most popular recipes for your favorite Bulgarian dish:
Classic mish-mash
Necessary products: 5 large red peppers, cut into small pieces, 500 g tomatoes, diced, 250 g cheese, 100 g butter, 5 eggs,, a bunch of parsley, 1 small onion, salt.
Method of preparation: Heat half the oil in a saucepan. Add the peppers and chopped onions. Stew the vegetables for 15 minutes under a lid, then add the tomatoes. Allow to simmer over low heat, without a lid. When the liquid from the vegetables has completely evaporated, add the other half of the oil. Stir and add the cheese and eggs. Stir vigorously for another 5-7 minutes. Remove the mish-mash from the heat and sprinkle with finely chopped parsley.
Mish-mash in Shopski style
Necessary products: 2 sprigs of leeks, 1 onion, 5 large potatoes, 5 fresh peppers, 2 hot peppers, 100 ml of vegetable oil, 5 red tomatoes, half a bunch of parsley, 2 sprigs of celery, salt, pepper.
Method of preparation: Onions, leeks, peppers, tomatoes and celery are finely chopped. The potatoes are boiled and grated on a grater. Heat the vegetable oil in a pan. Put the leeks, onions and peppers in the pan. When stewed, add the grated tomatoes, along with spices. When the tomatoes are cooked, add grated potatoes. Stir until the mixture thickens.
Mish-mash in a casserole
Necessary products: 2-3 onions, 2-3 tomatoes, 5-6 roasted peppers, 300 g cheese, 1 bunch parsley, 3-4 eggs, oil, salt and pepper
Method of preparation: Cut the onion into slices. Put to stew in a pan with a little oil and water. The inside of the tomatoes is hollowed out, finely chopped and added to the onion. Stir and add another half of the grated cheese, salt and pepper.
Fill the carved tomatoes and roasted peppers with the resulting mixture. Arrange in a clay pot and sprinkle with the remaining shredded cheese. Beat one egg on each tomato. Bake the casserole in a moderate oven. At the end of cooking, sprinkle with finely chopped parsley.
Mish-mash with minced meat
Necessary products: 100 g minced pork, 100 g ground beef, 400 g red peppers, 8 tomatoes, 2 onions, 4 cloves garlic, 4 eggs, savory, basil.
Method of preparation: The peppers are baked and peeled. Cut into small pieces. Chop the two minced meat and fry in a little olive oil. When soft, add diced onions and peppers.
When soft, add the tomatoes and salt. Allow to simmer on low heat for 10-15 minutes. Finely chop or crush the garlic and add to the mixture, along with the savory and basil. Last add the eggs. Stir thoroughly and cook for another 5-6 minutes.
