Italy is preparing legal changes to specify what fresh bread is in order to set a standard for it and introduce rules for its production and sale.

The clarification will start from what is meant by bread, and in the legal norms it will be clarified that this name can only be a product made of wheat flour, mixed with water, yeast and without salt.

Etiquette fresh bread will be able to wear only those products that are sold on the same day they are produced. The next day, the same bread will not be sold as fresh under the new bill.

Fresh bread will not be considered as bread made from frozen dough or mixed with semi-finished products.

According to the labels, people in Italy will understand which bread is made today and which has been for several days, and the authorities in the country add that traders will be obliged to separate the fresh bread on their own shelves, and not to mix it with other types.

The penalties provided for those who do not comply with the difference between fresh and all other derived species are seizure of the activity until the revocation of the certificates for production and sale.

The idea of the new changes is to make Italian fresh breads a trademark for the country, and to protect bakeries that prepare bread according to old recipes by law.

400,000 people and 25,000 companies are involved in this activity. More than 300 types of bread are made in the Apennines, and most of them are controlled by the authorities.

In polls, 37% of Italians said they preferred traditional bakeries and would welcome the new standard for fresh bread.

The list of traditional breads in Italy is long, but most people in our country know the typical chabata and focaccia from Italian cuisine. Biga and Apulian bread with vinegar are also known.
