In shape and color it is not among the most attractive vegetables, but its nutritional benefits are countless. Zucchini does not need special care, and probably few of you know that it grows by seven millimeters per day.

If you have decided to grow zucchini, it is important to remember that they are picked 2 to 7 days after flowering. You must make sure that it does not reach a length of more than 15 centimeters, as it changes its nutritional qualities.

Like potatoes and corn, zucchini was also brought from Central America. History shows that this vegetable was grown 10,000 years ago, and its mild taste and health benefits were residual to survive over the centuries and to be grown en masse to this day.

If we have to look at the zucchini through the prism of national identity, Bulgarians can rightly define the zucchini as a "national" vegetable.

There are 4 types of zucchini:

Squash - zucchini with a more non-standard shape and relatively different color, ranging from white to orange and green;

Shayot - Zucchini, which has the shape of a pear and often replaces avocados in salads. This variety requires longer heat treatment;

Zucchini - the body of this zucchini is elongated, their skin is thin green or yellow, and the core is tender and white.

Straightneck - zucchini with a cylindrical body and rough yellow peel. Its heart is sweet and juicy and is extremely rich in fiber and vitamin C.

As already mentioned, the health benefits associated with eating zucchini are innumerable. They are high in sodium and potassium, magnesium, phosphorus and iron, vitamin A, C, B1 and B2. They also contain a relatively high content of organic acids.

On top of that, zucchini is low in calories - only 21 calories per 100 grams. A bouquet of useful substances and no risk for our good shape - zucchini should definitely be present in our daily menu.

Consumption of zucchini is suitable for the prevention of stomach diseases, atherosclerosis, anemia and obesity. The fiber, which is abundant in the content of this vegetable, has a cleansing effect on the body and helps to remove the accumulated toxins in it.

Unfortunately, this is possible only if you grow zucchini in the garden, as they are not yet available on the Bulgarian market. But according to many gourmets, young zucchini flowers are a real delicacy. They can be served breaded or mashed mushrooms or potatoes.
