As the saying goes, prevention is even better than cure, provided that the different degrees of moldiness of the cheese are almost indistinguishable. That's why it's best to store the cheese properly so you don't have to run into such dilemmas at all.

To do this, first determine what type of cheese you are dealing with. For example, an unopened package of hard cheese such as Parmesan or Cheddar can be stored in the refrigerator for between two and four months or eight months in the freezer according to the food tasting table. Once opened, hard cheese is usually safe to eat for six weeks.

Gouda, white brined cheese and the like, which are not completely hard or soft, can meanwhile be stored in the refrigerator for two to three weeks after opening or two months in the freezer if the package is intact.

However, soft cheeses that contain the most moisture should be consumed within two weeks of opening. These are products like Bree, Camembert and Feta.

As for the removal of mold, appeared on the cheese, this is usually completely safe for hard cheese due to its low moisture content. To be sure, let the cut piece of mold be at least 2 mm thick.

Unfortunately, mold spreads more easily in semi-soft and soft cheeses. It's not worth the risk of trying to remove it at all. The only indicator that can help you see if soft cheeses are edible in the early stages of mold is their aroma. However, this is an uncertain method in view of the product itself, so you better not risk your health.
