Pumpkin is an almost obligatory companion of the winter holidays. We offer you something a little different, but just as delicious. One of our recipes is suitable for a main course and is with pork, the other is a dessert that will keep you fascinated.
The only difficulty in cooking the pumpkin is the cleaning of the inside, but the end result is so delicious that the effort is definitely worth it.
Stuffed pumpkin with mushrooms and pork
Necessary products: round pumpkin, 600 g pork, 3 carrots, 2 onions or 1 leek stalk, 350 g mushrooms, 250 g potatoes, 100 g tomatoes, 1 bunch parsley, black peppercorns, salt, bay leaf, olive oil, ½ h.h. Red wine.
Preparation: first you need to cut the lid of the pumpkin - cut the lid on the side of the handle, then scoop the inside with a spoon and salt. Remove the seeds and the tougher part of the pumpkin.
In a separate bowl, place the diced pork to simmer, then add the sliced carrots, diced potatoes, crescent onions, and red wine.
Allow to simmer and as they soften, add the halved mushrooms. Season everything with pepper and salt. After five minutes, add finely chopped tomatoes - let the mixture simmer and finally season with finely chopped parsley.
You should fill the pumpkin with the stuffing by putting at least two bay leaves between the products. Cover the pumpkin with the lid - you can wrap the handle with foil so that it does not burn. Put the stuffed pumpkin in a pan in which you have poured a little water. Bake for two hours in a moderate oven. Then, if you want to tan the dish, remove the lid and bake for another half hour without it.
Our next suggestion is for a sweet pumpkin - for this you will need two small pumpkin violins. You only need to cut the most tumbleous part of them - so that you get two bowls.
Carve out the seeds, wash well and smear both pumpkins with honey. If you like cinnamon, sprinkle with it - you know that pumpkin loves this spice.
Before you start digging the pumpkin, put 2 tbsp. raisins, dried apricots and in general any dried fruit, such as you have at home, to soak in rum. Once swollen, drain them and mix them with sliced pears, walnuts.
Mix all this, add cinnamon to the filling and fill the two pumpkins. Top nicely with honey. Put the pumpkin in a pan with a little water, wrap the pumpkin in aluminum foil and bake in a moderate oven until soft.
