Tomatoes are an extremely useful vegetable and they have won a place of honor on the Bulgarian table. They are widely used both for preparing salads and for mixing delicious dishes. According to the time of ripening we distinguish three varieties of tomatoes - early, medium early and late.

Early varieties of tomatoes are distinguished by their small size and light color, and their biggest advantage is that they are very juicy. These varieties are suitable for fresh consumption and can be used to prepare various types of delicious salads.

Some of the most popular early hybrid Bulgarian varieties are, for example, Zhar, Balkan, Maritsa 25 and Prekos. Their fruits are very appetizing - round, smooth and not very hard.

Medium early tomato varieties are also mainly intended for fresh consumption. But because they ripen in late August and early September, people also prefer them for canning.

Their fruits are large and healthy, containing more dry matter than those of the early varieties.

Some of the more famous varieties are, for example, Ideal, Nikolina, Jacqueline, Rouen, Opal, Milana and many others. Medium-early varieties of tomatoes are universal and are equally suitable for making salads and cooking. Their shape and color of the fruit can vary widely.

Late varieties of tomatoes are used mainly for canning. Their fruits are not large and most often their shape is oblong. They are characterized by healthy, firm and fleshy fruits.

The husk is also denser than early or medium-early varieties, so they must be peeled before canning. A variety of winter vegetables are prepared from canned tomatoes.

They can be canned on their own or can be part of other cans. They are also very popular as the main raw material for making the home-made lyutenitsa, which is loved by everyone.
