Many will say that fresh spices are on sale all year round, and that storing them is completely pointless. But it's not quite like that!
Many times we have been in a situation where we start cooking something unforeseen and it is necessary to add parsley or dill immediately. In these cases we need to urgently get the spices from somewhere and it is extremely convenient if we have them frozen in the freezer.
Freezing itself seems like an easy task, but we still need to keep in mind some peculiarities, especially if we are not experienced cooks.
Before freezing green herbs, we must carefully sort them, remove all damaged and spoiled twigs. Then rinse well. Usually green spices are washed under ice, running water. It is good to drain the water and dry.
After drying, chop the parsley and dill, as we do when adding them to dishes.
Chopped dill and parsley can be mixed and combined. You can easily prepare a green mix to your liking.
Then fill them with small bags and seal. We put a sticker with an inscription about the content and the month of freezing. In this form, the spices can be stored for up to a year.
Another method of storage is with oil. In melted butter add chopped parsley or dill. The butter should be as melted as it can be mixed with the greens.
Pour the aromatic oil into molds from a box of chocolates. Once the cells are full, place in the freezer. A few hours are enough for the molds to harden. We use them to make sauces, soups, stews, and we just throw away the candy forms without washing them.
