Bacardi's story

The history of popular rum begins in the 19th century in Cuba. Its creator is the Spanish emigrant Don Facundo Bacardi, who produced the first bottles of alcohol in his home.

Don Facundo has experimented many times to distinguish the stages of production, the exact ingredients and the ratio between them.

With his recipe, the Spaniard makes rum a popular drink among high society, as until then it was drunk mainly by pirates.

His Bacardi company at Compania opened on February 4, 1862, and since then the mass production of rum has continued, with all production and distribution technology becoming a family tradition and only members of the Bacardi family at the top of the company.

The production process begins with the delivery of fresh sugar cane molasses - one of the main ingredients for rum production. In consistency, molasses is very similar to honey, but is significantly darker.

Water and sourdough are added to the molasses, after which it is left to ferment. This process turns molasses into alcohol. The leaven is strictly guarded and kept secret. It was discovered by the creator of Bacardi - Don Fakurdo Bacardi, who cultivated the variety.

In the first stage of fermentation, the yeast absorbs the sugar in the molasses, stimulating it to turn into alcohol. Distilled beer is formed at this level.

In the second stage, alcohol begins to emit carbon dioxide. In this phase, the heat must be monitored, because the higher temperature does not have a good effect on the yeast. The temperature to be maintained is between 31 and 35 degrees Celsius.

Once the fermentation is complete, proceed to the next stage - distillation. First, the distilled beer is heated to evaporate the alcohol. The alcohol vapor rises, passing through a condenser, where it is cooled and converted into a distillate.

This process separates the alcohol from the beer and if the alcohol content is not enough, the distillate will be low. From this process a rum base is extracted - hot, 150-degree distillate.

After the end of fermentation, the distilled beer has an alcohol content of 10%. After distillation, the content increases between 70 and 75%. The process of creating a second basis for the future rum goes through this process.

After distillation, the rum must be mixed, and the ratio between the two bases produced is determined by the so-called mixers. One base is almost neutral, and the other is with the typical vein and aroma with which it is associated Bacardi.

Whether it is white or dark rum, the final product is a ratio between the two rum bases. After the bases are mixed, proceed to the next stage - aging. However, before being placed in the barrels, the rum is filtered through charcoal.

Rum is aged in wooden barrels, which change its vein, color, texture and aroma. Bacardi matures in always used barrels, as fresh wood will leave an atypical taste in the alcohol.

The Daiquiri cocktail is also made with Bacardi. You need 50 milliliters of white rum, 20 milliliters of sugar syrup, 30 milliliters of lemon juice and ice. Mix the ingredients in a shaker with ice cubes, shake well and strain.
