Risotto is a traditional Italian dish, especially popular in the northern parts of the country. Of course, the delicious specialty is extremely popular in Bulgaria, but alas, very often in our restaurants is offered only a faint imitation of the Italian original. Just like pizza, Italians believe that rice perfection should not contain all the handy ingredients that are in the refrigerator.

Milan is the birthplace of the real magic of risotto, when the city was under Spanish rule for nearly 2 centuries. Risotto is a dish with rice, which is prepared with different types of broth - meat, fish or vegetables. Its consistency is watery, similar to cream, and the taste of rice is rich and distinct.

It is important to choose the right varieties of rice to prepare the risotto. The purpose is for the rice to absorb water well and release starch to obtain a soft texture. The most suitable varieties are carnaroli, marateli and vialone nano, but they are also significantly more expensive.

Although the risotto has a creamy consistency, care must be taken not to overcook the rice and to allow each grain to separate, to be slightly crispy but not raw.

The Italians define risotto as minestra asciuta, ie dry soup, which, although it sounds contradictory, simply means that the result should be creamy, not watery and edible with a fork.

A kind of alchemical adventure called risotto, starting with sauteing onions (or shallots, and sometimes garlic), adding the other ingredients (mushrooms, vegetables or meat), followed by pouring wine and continuing to gradually pour the hot broth - one ladle each time the previous dose was absorbed by the rice. Finish with the so-called mantecato or add butter or olive oil and parmigiano. A frequently used ingredient in risotto is cream, which gives an even richer and creamier taste.

Undoubtedly one of the most famous types of risotto is risotto alla milanesese. It is prepared with onions, dry white wine, meat broth, butter, beef marrow, parmesan and of course saffron.
