What is Urfa Bieber and where does it come from?

Urfa is a Turkish pepper that comes from the city of Urfa. It has been grown for hundreds of years. Isot is definitely a big part of Turkish and sometimes Kurdish cuisine.

How is Urfa Bieber made?

Farmers harvest peppers when they are orange-red or darker-red. To get a really good taste from them, they dry them in the sun during the day. Thus, they receive direct exposure to sunlight, which gives them a dark burgundy color. But instead of just letting them dry completely in the sun, farmers cover them at night or even sometimes put them in bags.

This allows them to retain some of the natural oils from the pepper skin. This technique is called "sweating" because the peppers remain moist under the coating. So they dry out, but not completely. When you see pepper from Urfa, it always has this oiliness and almost moist texture. So it's not just about the feeling of warmth in the mouth, but also about the texture. To me, Urfa looks like the sediment at the bottom of a glass of red wine - very characteristic.

It is very rare to see a whole dry Urfa, because they are usually processed immediately. The producers grind the peppers and add salt, not so much to taste, but to avoid the formation of lumps in the package. This is a sign of improperly packaged spices. The final product is completely ready for cooking. There is also a preparation that you almost never see outside of Turkey: sour Urfa.

What does it taste like and how should we use it?

The aroma of dry Urfa is very saturated. It has hints of chocolate and wine tannins - very deep, with a very pleasant warmth. This is one of those spices that you can add to everything. Direct exposure to sunlight also creates the feeling of smoking, although in reality it is not.

People in Turkey mix isota with cumin, sesame or onion. It goes great with red pepper. This is the best friend in the kitchen. It gives an amazing taste to everything - you don't even have to cook with it, you can sprinkle it on raw vegetables or even use it for something you bought in the store.
