Tasty, with a slight sweet and sometimes salty taste, goat's milk is the chosen favorite for most countries around the world. Although not very popular in Bulgaria, it can be found in large supermarkets all year round.

Unlike cow's milk, goat does not need to be homogenized. In cow's milk, the oil droplets are released on the surface, while in goat's milk they dissolve. When people are sensitive to cow's milk, goat is a good alternative.

Although we consider goat's milk as an alternative to the cow, in many parts of the world, it is preferred. Most people think that it will have the same intrusive taste as sheep's cheese, but in fact real quality sheep's milk has a superb slightly sweet and sometimes salty taste.

Goats have played a very important role since ancient times, as evidenced by open reliefs depicting goat hunting. They are one of the oldest domesticated animals believed to have originated in Iran.

Goat's milk is extremely popular today and is still more common than cow's milk.

Composition of goat's milk

Goat's milk is a very good source of calcium and the amino acid tryptophan. It is a good source of protein, phosphorus, riboflavin (vitamin B2) and potassium. For children and adults goat milk can be a great, calcium-rich, alternative to cow's milk. In addition to calcium, it has many nutrients contained in cow's milk.

Consumption of goat milk in our country is too small compared to the consumption of cow's and sheep's milk. It has a specific odor that is determined by the volatile fatty acids that are contained in skin fat. It is because of this taste that people do not particularly prefer it. In some parts of the country it is used both alone and in combination with other milks for the production of dairy products.

In general, goat's milk can be used in all recipes in which cow and sheep are present. It must be used pasteurized, like other milks.
