The next reason for the high price of these mushrooms is the difficulty that is created in finding them. To find truffles, trained dogs are needed, most often using small breeds that are agile enough.

Before looking for underground fungi, dogs are trained and tested for canine intelligence.

In the past, female pigs were used to find truffles because they could smell mushrooms, but the risk of the animal eating the valuable find was too great. The search for truffles with pigs led to quite large losses, so the training of dogs began.

Such dogs are actually extremely valuable and are sold only in special kennels - they have a pedigree in the profession. According to sources, such a dog can cost several thousand euros.

Legends are also told about the people who collect valuable mushrooms. Collectors often leave with their helpers, the dogs, when dusk falls. According to some legends, there are hidden calendars on which great masters have marked the places where they found these valuable mushrooms, as well as the dates when they "appeared".

It is even believed that the phases of the moon are important for the search for truffles. Truffles are harvested in certain months - different species are sought at different times of the year. The black summer truffle, for example, is sought after from May to September. Its price starts from about 200 euros per kilogram.

The black winter truffle is in demand between December and March - its price starts at $ 1,000 per kilogram. The white truffle can rightly be called the champion in the truffle family - it is an extremely rare species and unlike other types of truffles can not be grown artificially.

It can be discovered between September and October, but only a true master connoisseur can hit the best moment for it. It lasts only a few days. The starting price of white truffles is 3,000 euros per kilogram.

Some time ago, the most expensive truffle in the world was considered to be a white representative of these mushrooms, weighing 1 kg and 200 g. It was sold at auction for about 100,000 euros. However, he was defeated by another white truffle weighing 1.5 kg, which was found near the city of Pisa and sold in Monaco for 150 thousand euros.

It is said that the buyer, who counted almost 100 thousand euros for his truffle, threw it away because he did not use the mushroom immediately, and as it turned out, the shelf life of white truffles is several days.
