The newlyweds, who are ahead with the organization of their wedding, must have faced the issue of the menu. And if you want your wedding day to run in sync with Bulgarian traditions, it is good to know what are the traditional Bulgarian wedding recipes?
How to make this day authentic, fully carrying the spirit of Bulgarian folklore? In this article we will help you with a few recipes:
Wedding wheat
Necessary products: 1/2 kg of wheat, milk, 2-3 tablespoons of flour, butter, sugar and vanilla.
Method of preparation: Boil the wheat (about 500 g) in the evening. Boil it for about 2-3 hours, then fill it with water and leave it like this until the morning. The next day, pour the water (if any) and add fresh milk - enough to cover the wheat and 1-2 inches on top.
Cook for about ten minutes. Meanwhile, fry the flour in a separate bowl. Add the stuffing to the cooked wheat (the proportions are the same as when frying beans).
It will be tastier if you use butter instead of oil. According to the authentic recipe, the dish is made with melted bacon. Once you have added the porridge to the wheat, add sugar to taste and vanilla.
Wedding soup
Necessary products: 1/2 kg of meat from an awl, onion, butter, 1 tsp. rice, one egg, 2 tablespoons yogurt, salt, pepper and parsley.
Method of preparation: Boil and bone the spiked meat. Cut it like soup. Put it in the broth in which the water has boiled. Meanwhile, in a pan with a little oil, fry a head of finely chopped onion and add it to the broth. Add another tea cup of cleaned and washed rice. Bring to the boil until the rice boils.
Remove the pan from the heat and make a build-up of 1 egg and 2 tablespoons of yogurt. Add to it a few spoonfuls of warm soup and stir vigorously so as not to cross. Once it is warm enough, pour it into the soup and stir again. For splendor, sprinkle with parsley on top.
Wedding ripe beans
Necessary products: 400 grams of ripe beans, 4-5 onions, 100 milliliters of vegetable oil, 2 hot peppers, 3-4 peppers, 50 grams of rice, 1 teaspoon paprika, 1 bunch parsley, 3 sprigs of mint, 4-5 red tomatoes and salt to taste.
Method of preparation: Pre-soak the beans for 24 hours, then cook it for about 15-20 minutes. Drain it and pour cold water over it again.
Boil again until soft together with some of the onion and vegetable oil, chopped peppers and toasted hot peppers. Then add the rice and later the remaining onion, finely chopped and stewed in the rest of the fat.
Add a little more water with the red pepper and finely chopped red tomatoes. Add salt to taste and sprinkle with finely chopped parsley and mint. Allow to simmer for about 10-15 minutes.
