There is no person who has not eaten moussaka, or at least is not familiar with what it is. We consider it a traditional Bulgarian dish, but in fact moussaka is an Arabic dish and even its name is borrowed from Arabic, where it is "musaqqaa", which literally means cold.

Moussaka exists among all Balkan peoples: Bulgarians, Turks, Greeks, Romanians, we all accept moussaka as part of our own culture and cuisine.

Although all these peoples have a dish bearing this name, there are huge differences in the preparation of muscat. As we know in Bulgaria, moussaka is prepared from minced meat, potatoes, onions and spices, which are stewed, then baked and finally poured with a mixture of yogurt, egg and flour.

In Arabic cuisine, hence its name, the preparation is more like a salad, as it is a chilled dish of eggplant and tomatoes. Served as an appetizer.

The Greeks are the ones who helped popularize the moussaka and that is why the Greek recipe is accepted as original around the world. It is prepared without potatoes, but with eggplant.

Greek moussaka is made by alternating layers of fried eggplant slices, tomato sauce and minced meat, mostly mutton or beef. Its filling is made with bechamel sauce and for the end - grated yellow cheese.

Turkish moussaka (minced meat, green peppers, fried aubergines and onions) is made with such products, but they are not arranged in layers. The Turks serve it with pilaf or Turkish tarator (jajik).

The Romanian moussaka is close to the Bulgarian one, as the eggplants are also replaced by potatoes. Moussaka today has many options and different ways to prepare it. It is made with or without meat, with cabbage, peppers, mushrooms or beans.

It can be used to interpret a lot. Its filling, however, remains unchanged: flour, yogurt and egg. Although it can be prepared without it. After all, it's all a matter of taste and preference.
