Here are a few more mom's rules for making our favorite cupcakes, which we eat with such pleasure on any occasion.

- Always sift the flour with baking powder and other dry ingredients powdered sugar, cinnamon, cocoa and others;

- The dough should not be mixed vigorously, even a little with a mixer! Do not be tempted to reach a smooth homogeneous dough. Stir as long as the ingredients are mixed - carefully and briefly. If you mix too much, the muffins will become very hard. Even if you think the dough is lumpy, don't worry - everything falls into place when baking;

- The forms must be filled to a maximum of 2/3 of their volume, so as not to overflow the dough during baking;

- Baking time depends on the size of the shapes and composition of the muffins - it is usually about 20 minutes;

- Check if muffins are ready with a toothpick. When the stick comes out clean from the center of the muffins and they start to separate from the walls of the form, then they are ready;

- If you use a ferrous metal pan with a non-stick coating, reduce the baking temperature set in the recipe by 5-10 degrees, as dark surfaces absorb heat better;

- Bake the muffins in the center of a preheated oven.

If your muffins don't swell enough, it could mean that the temperature wasn't high enough, and if they weren't evenly baked, that you didn't place them in the middle of the oven;

- Never toast the muffins, because they will become very dry.

If you prefer muffins if you have a crispy crust, do not use paper capsules;

- If you do not have enough dough to fill all the slots on the pan, pour water into the empty ones.
