Foods rich in cooked tomatoes can increase your body's ability to protect itself from the sun's ultraviolet rays and defeat the effects of aging, according to a study by scientists from the Universities of Manchester and Newcastle, England.
The researchers fed the ten volunteers a daily ration of 10 grams of olive oil and 55 grams of plain tomato paste, while another ten received only olive oil. After three months, the researchers analyzed skin samples from each of the 20 participants.
They found that volunteers who ate tomatoes showed 33% more protection against burns than those who took only olive oil. They also had higher levels of procollagen, a protein that plays an important role in preserving the structure of the skin.
"The tomato diet has greatly increased the level of procollagen in the skin. These increased levels suggest a potential halt to the aging process of the skin." Says scientist Leslie Rhodes: "We haven't given people in the group huge amounts of tomatoes. About the amount you would normally be able to handle if you ate a lot of tomato dishes."
Scientists believe that the increase in protection is caused by an antioxidant in tomatoes called lycopene. Because the lycopene in raw tomatoes is in a form difficult for the body to absorb, heat treatment dramatically increases the bioreactivity of the chemical. That is why tomato paste is used.
Scientists believe that lycopene neutralizes free radicals that form when UV radiation begins. These free radicals are linked to cancer and the effects of aging.
Scientists warn that sun protection obtained in the tomato way is equivalent in strength to that created by sunscreen and should be used only as friendly advice.
