This irresistible French specialty is at the same time relatively easy to prepare, and you can diversify your menu with different fillings to enjoy. That's why we offer you 3 tried and tested recipes for eclairs from French cuisine:

Basic eclair dough, known in French cuisine as A Shu dough

Necessary products: 100 g flour, 4 eggs for the dough and 1 for spreading, 50 g butter, 100 g water, a pinch of salt.

Method of preparation: In a suitable bowl, mix the water and oil and place them on a hot plate until they boil. Remove the pan from the heat and gradually add the flour, stirring constantly with a wooden spatula to avoid lumps. Return the pan to the hob and continue to stir until the dough begins to separate from the spatula.

Remove the pan from the heat again and add the eggs one by one, but still stirring with a spatula. Do not forget a pinch of salt. You can try the dough by touching it with your fingers. If it is easily separated by touch, then it has reached the required density.

Put the finished dough in a bag with a tip about 1 cm and pass through it strips about 10 cm long. Spread them with beaten egg and brush them with a fork so that they look like real French eclairs.

Bake them in a preheated 180 degree oven for about 10 minutes. Allow them to cool, cut them in half lengthwise and fill them with cream as desired.

Necessary products: 500 ml fresh milk, 2 eggs, 250 g powdered sugar, 80 g flour, 1 packet vanilla

Method of preparation: In a bowl, beat the eggs, vanilla and sugar, and finally add the flour. Carefully add the pre-warmed milk, stir and transfer the liquid to a saucepan. Put it on a hot plate and cook until you get a thick enough cream.
