Wok is a Chinese pan with narrow bases and high steep sides. In addition to vegetables and meat, pasta (pasta) can also be prepared in the wok. Yakisoba is a traditional Japanese specialty that is fried noodles with pork, cabbage and sauce.
Here's how to make noodles in a wok in 9 steps:
Step 1: Choose the pasta - preferably soba (a type of Japanese whole grain noodles). If you don't have them and can't find them, you can use Chinese egg noodles or any kind of noodle-like paste (long, round, like noodles). Use the instructions on the package of the paste to boil it.
Step 2: Boil the pasta until semi-finished. Start trying after the third minute. It will be ready in 3-7 minutes. Pour the pasta into a colander and drain.
Step 3: Add sesame oil - up to 1 tbsp. for each serving. Then, by tossing, stir the paste and set it aside.
Step 4: Grate or cut your vegetables into thin strips. Remember - vegetables should not be cut into thicker strips of pasta. The vegetables should be edible in size without additional cutting after they have been cooked. You can season with a little garlic, fresh ginger or pepper.
Step 5: Prepare your sauce. If you wish, you can use your favorite soy sauce. Otherwise, you can buy a ready-mix for mixing or experiment with combinations of soy sauce, mirin, ginger, toasted sesame oil or anything else you think might be good. The amount of sauce you need is a matter of taste, but 1/4 to 1/3 cup per serving is the recommended option.
Step 6: Cut the meat into thin strips. Like vegetables, the pieces should be easy to eat. If you want, you can add a little soy sauce to the meat to marinate it while warming your wok. If you don't want meat in your pasta, you can put tofu or nuts to use instead. Or you can skip this step altogether.
Step 7: Heat 1 to 3 tablespoons of butter in a wok over medium-high to high heat. The oil will start to sparkle when it reaches the required temperature.
Step 8: Add the meat to the pan first. Stir for one minute. Add the vegetables after the meat changes color. Add the harder vegetables and the vegetables that need to be cooked first: onions, carrots, celery, garlic.
Stir and cook for 30 to 60 seconds. Then add the softer vegetables: cabbage, peppers, ginger. Stir and cook for a minute or two. How long you cook the vegetables depends on how soft you like them. Stir (throw) the contents into the wok constantly so that it does not burn. Finally add the green spices.
Step 9: As soon as you add the spices, add the noodles and sauce. Stir until the pasta and vegetables are evenly covered with the sauce. Reduce the cooking temperature and cook as desired or until the spices are dry. Immediately pour into a serving dish.
Is cooking in a wok healthy?
Cooking in a wok is characterized by constant stirring, it is used for healthy cooking, especially if a lot of vegetables are used in the dishes. This is only if you limit the number of high-calorie and high-fat ingredients and do not add a lot of fat during the cooking process.
Limits the fat content - when cooking in a wok with constant stirring, you only need a minimal amount of oil due to the high heat used in this cooking method.
You can even replace fat with broth to further reduce the fat content of food. It is desirable to include in a minimum amount of fat, because otherwise you will not be able to absorb all the fat-soluble vitamins from vegetables in the dish.
Helps reduce nutrient losses - long cooking times increase the loss of heat-sensitive vitamins, including vitamin C and vitamin B. Cooking in a low-fat wok preserves the beneficial ingredients in vegetables.
