The next time you feel like having an avocado, skip the guacamole and toast (although both are a great way to satisfy your avocado cravings) and turn your thoughts to chocolate pudding.

Yes really! There is more than one way to thicken pudding without using eggs when you want to make a vegan version of this classic American dessert. Cornstarch and bananas are two popular tricks, and now you can add avocados to the list. Be sure that this vegan pudding is just as tasty as you would like - rich, velvety, with a deep aroma of dark chocolate.

Another great advantage of using avocado when making chocolate pudding is the easy recipe. All you have to do is add all the ingredients to the food processor, press buttons and you are minutes away from an amazing chocolate pudding without having to stir over the stove.

I like to use almond milk, but all dairy products bought from the store will fit well in this recipe. Natural, unrefined sugar, such as maple syrup, also ensures that this dessert maintains a healthy balance.

The chocolate and orange flavors blend beautifully together, so I couldn't resist the temptation to add fresh orange juice. For a pure chocolate flavor, you can skip the juice and add an extra tablespoon of almond milk.

What you need:

1 well-ripened avocado;

3 tablespoons maple syrup;

2 tablespoons cocoa powder (about 15 g);

juice of half an orange;

1 teaspoon (5 ml) vanilla extract;

1/4 cup (60 ml) almond milk (or other milk);

If desired, you can add fresh raspberries or cream as decoration.

How to prepare it:

Slice the avocado. Add it together with the maple syrup, cocoa powder, orange juice, vanilla and almond milk in the bowl of the food processor. Run several times until it starts to become a homogeneous mixture. The procedure takes 1 to 2 minutes until the avocado is completely ground and the mixture is smooth.

Divide into small bowls. Cover and refrigerate for at least 2 hours until the pudding is ready. Before serving, you can decorate with whipped cream and raspberries or something to your liking. In the end, all you have to do is enjoy the amazing taste of this light summer dessert.
