Necessary products:

- 400 g of spaghetti;

- 4 large eggs;

- 200 g guanchale (pork cheeks);

- 100 g grated Pecorino cheese;

- freshly crushed black pepper;

- salt;

Method of preparation:

1. Boil the spaghetti al dente in 6 liters of generously salted water. When they are ready, save about 120 ml of water, then drain the remaining amount.

2. Cut the guanchale into cubes. While the spaghetti is cooking, in a large skillet over medium heat, add the chopped meat and fry for about 3 minutes or until crispy and golden in color. Do not add extra fat, as guanchale is oily enough. Remove the pan from the heat;

3. In a small bowl, beat the eggs and add the grated Pecorino cheese. Stir until a creamy sauce is obtained.

4. Return the pan to the hob and pour in half of the saved water. Add the spaghetti and mix well;

5. This part of the recipe is extremely important, you have to be extremely fast and skillful! Remove the pan from the heat and add the egg mixture, stirring very quickly, until the eggs thicken. If your sauce seems too thick, dilute the remaining amount of water;

6. Season generously with freshly crushed black pepper and grated Pecorino cheese;

7. Consume immediately after serving.
