A new study claims that eating with purple potatoes may reduce the risk of developing colon cancer. The study showed that in pigs fed vegetables, the levels of damaged protein, which feeds tumors and other inflammatory bowel diseases, decreased by six times.
The researchers also found that other colorful vegetables such as beets, broccoli and red grapes can have the same beneficial effects on the body. They believe that an intensive diet with these gifts of nature can prevent a number of terrible diseases of the digestive system.
Understanding how these nutrients work at the molecular level can lead to new drugs for cancer and other potentially fatal conditions, said the team at Pennsylvania State University, which worked on the topic.

The farm animals fed in this way had six times less damaged protein called IL-6 (interleukin-6), which feeds tumors and other inflammatory bowel diseases, compared to the control group of pigs fed in the standard way.
What we learn from the study is that food is a double-edged sword - it can promote disease, but it can also help prevent chronic diseases such as colon cancer, Vanamala said.
After their discoveries, scientists will seek to isolate the substance that leads to the beneficial effects of purple potatoes, and to invent on its basis an effective drug against colon cancer.
