Arabic cuisine, known for its richness of flavors and aromas, is also one of the most ancient. It places special emphasis on aromatic waters, fragrant grasses, vegetables, lamb, legumes, bulgur, lemons, honey and more.

Although fish dishes are not so popular with the Arabs, they are prepared with great care and in various forms. Especially popular is the preparation of fish on the Arabian Peninsula itself, where along the coast there are Mediterranean turbot, white fish, tuna, sole and more. The fish can be cooked fried, grilled, in the form of a skewer or kebab, but very rarely you will see it cooked.

In Iraq, where more fish is consumed than in other Arab countries, the most famous fish specialty is Masgufwhich is prepared from smoked fish. No less popular is the dish of roasted fish with tahini sauce, in which the fish may be stuffed or not, and if you fill it, it is with ground walnuts, crushed garlic, coriander and salt to taste.

However, it is important that the fish is white and served with tahini sauce. This dish is called Samak bi tahan and if you want to add a little Arabian flavor to your daily menu, you can learn to make your own Arabic specialty with fish. This is how:

Necessary products: 1.5 kg white fish, 5 onions, 3 tablespoons olive oil, 8 lemons, 3 cloves garlic, 7 tablespoons tahini, a few sprigs of parsley, 1 tsp. cinnamon, 2 pinches of cumin, salt and pepper to taste

Method of preparation: In a small bowl, mix the crushed garlic cloves, squeezed lemon juice and tahini. Mix everything well to obtain a homogeneous mixture, then add the cumin, finely chopped parsley, cinnamon and season with salt to taste. Again, mix everything until you get a relatively thick sauce.

The fish is washed and cleaned, then dried and salted. Heat olive oil in a pan and fry sliced onions in it. They are placed in the dish in which the fish will be baked, and the fish itself is placed on top and baked in a preheated oven at 180 degrees until fully cooked. Only then pour the tahini sauce on it and leave the dish in the oven for another 5 minutes, after which it is ready to serve.
