Fresh herbs are one of those difficult products to buy, as the standard amount they sell is almost always much larger than is needed for a recipe.
Thus, some of them almost always spoil. And this, of course, is extremely unpleasant. Even just one day in the fridge can cause fresh herbs and spices to loosen, darken, discolor and even spoil.
For this reason, you can certainly grow your own herbs or just find a way to avoid spoiling them by store the spices properlyso that they last as long as possible. To do this, you need to divide them into two major categories and look for the optimal one method of storing spicesthat suits every type.
Soft and hard herbs
We distinguish the two types of herbs by their texture. Rosemary is an example of a "hard" herb, while parsley will be classified as "soft". You can decide for yourself by looking at the stems. The green, tender stem puts them in the "soft" category, while the brown, woody or thick ladder makes them "hard".
Soft herbs: parsley, coriander, dill, mint, basil.
Hard herbs: rosemary, thyme, sage, savory, chives.
The best way to wash fresh herbs:
Instead of keeping fresh herbs under the tap with running water, which can damage the leaves and tear off the delicate stems, fill a large bowl with lukewarm water, soak your herbs and gently shake them left and right.
The best way to dry fresh herbs:
After washing them, we come to the drying of the herbs - this step is important, because storing wet, dripping herbs in your refrigerator is not a way to keep them fresh. So put kitchen paper, take the wet herbs out of the water, allowing the excess water to drain, then put them on the paper. Cover with a second piece of paper and lightly press the herbs. You won't dry them 100%, but you don't have to. Yours fresh herbs they should be slightly moist but not wet.
How to store fresh herbs
And now we come to the two methods of storage - one for soft herbs and one for hard. Keep soft herbs in jars of water in the refrigerator. A simple glass jar will do the trick. Fill the jar halfway with water. Collect the herbs in a pile and place them in the jar.
If the stems are very soft, the herbs can relax a bit instead of standing upright, which is good as long as the ends of the stems are in the water. Then take a plastic bag and cover the entire top so that the herbs are completely closed. Secure the bag with rubber band and transfer the jar to the refrigerator, where your herbs will be kept for two to three weeks.
It is even easier for hard herbs. This is because the best way to store hard herbs in a damp paper towel is in a plastic bag that can be resealed in the refrigerator. And since they are already on a damp paper towel, all you have to do is roll them up carefully.
If the paper towels are too wet, you can use new ones. But if you use new ones, spray them with water, as dry paper towels will not work for you. Then put them in the bag and without sealing it, transfer to the refrigerator. Stored this way, your hard herbs will last for two to three weeks.
