The most important tradition of the holiday is related to the first cutting of the vines for the year. This is done in order to have a large and good harvest throughout the year. Hence the name of Trifon's Day - Trimmed.
Bulgarian hosts traditionally have to wake up before sunrise and fry a chicken stuffed with rice in a small copper pan. It fits nicely in the cup wine and together with the chicken and some home-made bread, the man goes to the vineyard, where all the men of the village gather. This is the beginning of the holiday.
This time of year is the only one in which the vine growers do not have much work and can gather all together and have fun. Then comes spring and work on the new crop begins. That is why the holiday lasts 3 days - a lot of fun, wine and laughter.
When they go to the vineyard, the men cross themselves and then cut three sticks from the vines, then pour the wine into the vines, cross themselves again - this is the ritual of abandonment. It must be chosen which of all the men will be King of the vineyards. When selected, it should be decorated with wreaths of vine sticks, sitting on the rider.
The cyclist was pulled by the other men and thus returned to the center of the village. All the houses start to be toured - the hosts have to move out wine, to give first to the king, then to the others. When wine remains in the cauldron, it is splashed on the king and then a blessing for blessing is pronounced.
When they reach the king's house, he changes into new and clean clothes and sits at a large table where all the people of the village can attend. The next two days of the holidays are called trifunci. They are marked in different ways - to protect against wolves.
The women knead ritual bread, distribute it to the neighbors and put what is left in the animal's milk. This is done so that everyone can protect themselves from wolves - both humans and animals.
On these two days, women should not knit, sew or use scissors at all.
