9. We need to squeeze them when they are soft. Remove from the heat and add 2 tsp. cooler water to stop the cooking process. Then squeeze the spaghetti out of the water using a colander - the procedure is done over the sink. Drain well. Depending on the pasta sauce you are going to prepare, you can save 1 tsp. from the water from cooking the spaghetti to add to the sauce;
10. Do not think to wait for the water to cool and then drain them - the procedure is performed while they are very hot. Never let spaghetti soak in hot water;
11. Do not leave spaghetti under running water;
12. Once drained, return them to the empty pot and start making the sauce as desired. If at this stage you want to mix the spaghetti with olive oil or a piece of butter, think again - the fat will wrap around the surface of the pasta and the prepared sauce will not be able to taste good;
