Limontuzuto is tartaric acid for culinary purposes. It is a white crystalline powder with a strongly sour taste, resembling that of lemon concentrate. Today, lemon juice is obtained synthetically, while previously the acidic substance was obtained by distillation of wine waste.
In fact, limontuzu is an incorrect and misleading name in the tartaric acid retail chain. It is used as a spice in cooking and has a wide application. The word "limontuzu" itself has a Turkish root - it comes from the word limontuzu (limon "lemon" + tuz "salt," understand "lemon-flavored salt") and therefore the correct spelling is limontuzu, not limontozu, as is common, but wrong.
Lemongrass is available in small packages, which misleadingly write in large letters citric acid. This clever trade trick has been ingrained in lemongrass sales since before 1989 and has persisted to this day. In most cases, the offered product lemon juice is a synthetically derived tartaric acid, not citric acid.

History of the lemongrass
The history of this acid can be traced back in time, up to 800 g, when it was first obtained from potassium tartrate. In ancient times it was known as tartar (also trigia, tartar).
For the predecessor of today lemon juice we should be grateful to the Persian alchemist Jabir ibn Hayan, who contributed much to other similar and basic chemical processes that are applicable today.
In fact, the modern process for extracting tartaric acid / limontuzu was discovered in 1769 by the Swedish chemist Carl Wilhelm Scheele.
In 1832, Jean-Baptiste Bio discovered the so-called chirality (optical isomerism) of tartaric acid. The scientist observed the ability to rotate the plane of polarized light.
These studies were inherited by Louis Pasteur, who worked on the synthesis in 1847. Pasteur then studied the shape of tartaric acid crystals and found that they were asymmetric. Pasteur is the scientist who first received a pure sample of L (+) - tartaric acid.
Culinary use of lemon juice
Limontuzuto is used as a solution. For this purpose, take 1 tsp. of the substance and dissolve in 3 tsp. hot water. The resulting juice strongly resembles lemon juice and is therefore often used as a substitute. The juice of one lemon corresponds to approximately 5 g of acid crystals or two small teaspoons of a solution of it.
Limontuzu or a solution of it you can add to any dish or sauce to which you want to give a lemon, slightly sour taste. Even the mayonnaise, which is popular and loved by many of us, can be prepared at home with the addition of a pinch or two of lemon juice.
Tartaric acid is also used as a kind of preservative for making jams, marmalades and jams. It is usually added to the already prepared, cooked jam, 1-2 minutes before removing from the heat and pouring into jars.
Limontuzuto finds various other applications outside of cooking. It is used again as a solution for household purposes and cleaning of dirty boards.

It is recommended to eat vegetables with lemon, because the content of vitamin C in it prevents the conversion of nitrates into nitrites and the formation of nitrosamines.
