Traditionally, lutenitsa is one of the most preferred products on the Bulgarian table. Unfortunately, people who do not have the time and opportunity to prepare it at home often trust producers who do not always follow the long-standing recipes for making good lyutenitsa.

From September this year, however, the Bulgarian consumer will be much more oriented and informed regarding the qualities of lutenitsa and ketchup. According to the director of the Food Agency, in a few months we will be able to recognize the real lyutenitsa, made of natural materials, by its logo. The inscription will guarantee the fact that the vegetable products are prepared according to the established standard.

However, this news is unlikely to be well received by producers who sell jars of lyutenitsa for 70 stotinki. Experts comment that this price certainly "speaks" for the fact that the mixture contains substitutes, powders, starch and preservatives, rather than real pepper and tomato paste.

The expectations are that the lyutenitsa according to the Bulgarian state standard will have an increase of no more than 50 stotinki.

However, it should be noted that this standard will not be mandatory but recommended. It will guarantee quality only for products that bear the appropriate logo.

The state ministry claims that the new requirements include conditions for lutenitsa and ketchup to be made only from Bulgarian vegetables. According to the discussed standards, only pepper and tomato puree, vegetable fat and spices can be added to the lyutenitsa. However, the specific amounts of the ingredients have yet to be determined.

The intentions of the government are to register lutenitsa as a traditional Bulgarian product in the European Union. To this end, the responsible services must speed up their actions, as there is a possibility that another Balkan country will overtake us in this endeavor.
