This is a story about a trip in the snowy Alps, but also a story about how the Alps turn an ordinary sandwich into a legend. "Croûte au fromage" literally "cheese crust". Why crust? !!

Probably because it uses rustic bread with a thick crust. But I will start with the very beginning of this journey in the early morning, after it has been snowing fluffy all night and accumulating a thick blanket of snow. My first thought was whether or not to give up? !! But then I said to myself that if everyone gave up, the tracks would be empty.

And they were crowded, as I found out later. The bus came in a second, and its next stop was in front of the cog railway station, which was descending from the hill. Everything was calculated so that the people on the high-altitude train could get on the bus without waiting.

Grandparents, 80-85 years old, came, carrying their skis, with which they had apparently descended to the station of the chain train from their snow-covered huts, in which they lived all year round. I will not continue with the details of my snow trip. I will only say that I successfully reached the small traditional restaurant at the foot of the majestic Alps.

There we ate this amazing sandwich, which is very similar to our baked sandwiches with ham and yellow cheese. The difference is that the bread is dipped in white wine, and in Switzerland it is additionally sprinkled with local cherry brandy. It must be served in the jars in which it is prepared, which are rubbed with a clove of garlic.

Thus, first the bread is baked, on which are arranged a few slices of onion (the inhabitants of the canton of Valais add a few slices of tomato), a piece of ham or smoked breast, a pinch of nutmeg and covered with thick slices of Gruyere or Emmental cheese, and if the Alps are French, local French cheeses are used. Bake all this until the cheese is well melted.

Then one egg can be added, and pickled onions and pickles are a must. Accompanied by white wine from the region or fragrant alpine tea, this "ordinary sandwich" becomes a real feast for the senses, warms both body and soul.
