Spicy, appetizing, with a slightly spicy and sweet aftertaste, ginger is considered a universal spice according to Ayurveda. It is also known in Bulgaria as isiot or ginger. Its dried and crushed root has a much stronger taste than the fresh one. Combines well with rice and legumes, dairy products. It is used to prepare many varieties of recipes for pasta and cakes. Ginger is a pleasant and spicy spice for marinades and sauces. Here are three recipes that will charge you with a "ginger" mood.

Fresh salad with ginger

Necessary products: 1 tbsp. Dijon mustard, 1 tablespoon fresh lemon juice, 2 tablespoons rice vinegar, 1 tablespoon fresh ginger, peeled and chopped, 4 tablespoons rapeseed oil, 1/2 iceberg lettuce, grated, 2 tablespoons chopped fresh parsley leaves, lemon slices for garnish, freshly ground black pepper and salt to taste.

Preparation: In a high-speed blender, beat the mustard, lemon juice, rice vinegar and ginger for just a few seconds until the mixture is smooth. Then reduce the blender to a lower speed and slowly pour in the rapeseed oil. Season with salt and pepper to taste. Arrange the grated iceberg lettuce on a plate, emphasizing that it should be raised in the center. Add the pre-made dressing to the blender. Sprinkle with parsley around the edges of the plate and garnish with lemon slices.

Spring soup with ginger

Necessary products: 1 large onion (250 g), 2 tablespoons (30 ml) olive oil, ½ teaspoon sea salt, 1 large sweet potato (350 g), 1 large leek stalk, white and light green parts (140 g), 1 bunch spinach (225 g), chard (beetroot) - 350 g, 3 tbsp (30 g) chopped fresh ginger (you can add more to taste), 2 cups (500 ml) vegetable broth, 2-4 tablespoons fresh lemon juice, freshly ground black pepper to taste.

Preparation: Chop the onion and cook it slowly in olive oil with a pinch of salt until soft and slightly caramelized. Meanwhile, peel and dice the sweet potato. Then put it in a large saucepan with 4 cups (1 liter) of water and add half a teaspoon of sea salt. Thoroughly wash leeks, spinach, beets, cut them into large pieces and add them to the pan along with the chopped ginger. Wait for the water to boil, then reduce the heat and simmer the soup, covered, for 30 minutes or until the vegetables are completely soft. Add the onions when ready. Then add the vegetable broth (you can add less if you want the soup to be thicker). If you want to make a cream soup, just mash it. Finally, add 2 tablespoons of lemon juice and a little black pepper to the soup.

Marinated salmon fillet with ginger

Necessary products: 70 g of skim yogurt, 2 tablespoons finely chopped fresh ginger, 2 cloves garlic, finely chopped, 2 tablespoons lemon juice, 1 tablespoon freshly grated rind of green lemon (lime), 1 tbsp honey, 1 tbsp rapeseed oil, 1/2 tsp salt, 1/2 tsp freshly ground black pepper, 600 g salmon fillet (about 2 cm thick.), cut into 4 pieces with the skin.

Preparation: Mix together yogurt, ginger, garlic, lemon juice, grated lime peel, honey, oil, salt and pepper in a small bowl. Place the salmon in a shallow glass dish and pour the marinade over it. Turn the salmon so that it can absorb on all sides. Cover and marinate in the refrigerator for 20 to 30 minutes, turning it over again at least once or twice.

Meanwhile, prepare the grill. (Do not use a grill pan - the salmon will stick). Place the salmon, skin side up, on the grill. Bake for 5 minutes. Carefully turn the salmon over and let it roast until it darkens in the center - no longer than 4 to 6 minutes. Remove the salmon from the grill. Remove her skin. Thus prepared, it can now be decorated and garnished with your choice.
