Citrus Turkish delight is made from 5 teaspoons of sugar, 2 cups of water, half a cup of starch, grated peel of one lemon or orange, 3 drops of lemon or orange essence, 5 tablespoons of powdered sugar.
Dilute the starch with a glass of water so that there are no lumps. Pour the remaining water into a saucepan and add the sugar, stirring occasionally. Boil for fifteen minutes over medium heat.
While the syrup is boiling, pour in the starch, reduce the heat, add the lemon or orange peel and boil until the mixture thickens.
When the Turkish delight is separated from the walls of the dish, add the citrus essence, stir once more and put in molds, smoothing with a wet spoon, or form as a long thin salami.
Cool for about four to five hours. After it cools down completely, cut it into pieces, roll it in powdered sugar and put it in a box or in an oval plate.
Pink Turkish delight is made from 3 tablespoons of starch, 4 cups water, 4 cups sugar, 2 tablespoons raspberry or strawberry syrup, 2 drops of rose oil or 20 milliliters of rose water, 20 grams of butter, half a cup of powdered sugar.
The starch is diluted in a glass of water. The remaining water is mixed with the sugar and boiled, periodically removing the foam. Stirring constantly, add the starch in a thin stream and boil until it begins to separate from the walls of the vessel.
Remove the mixture from the heat, add the syrup and rose oil or water, and spread on a greased pan as a large rectangle three centimeters thick.
After four hours of cooling, cut into pieces, roll in powdered sugar and arrange in a box or plate. You can add pieces of nuts to the still warm Turkish delight.
