Making cotton candy is a great art, but if you approach it correctly, it is also a great pleasure. The taste of cotton candy is like caramel, but it looks incredibly impressive, professional and festive.

Perfect made cotton candy can be used to decorate desserts with clouds of shiny threads, and can be made into a sugar basket for fruit or ice cream.

A December 7 is the official cotton candy day, so bet on diversity and try to prepare at home this sweet temptation from our childhood.

Start spinning

However, there are also problems. You need a room with dry air, and you also need to cover the kitchen floor with newspapers. The cotton should be made no later than one hour before serving, because (unless you have fitted airtight containers equipped with silica gel to absorb moisture) the wonderful air results of your spinning will soon turn into ugly lumps sticking to teeth caramel.

However, get started

Despite these terrible warnings, any good chef could deal with it at least once in his life making cotton candy. The pleasure of mission success is unimaginable and actually easier than it seems.

Notes on cotton candy

It is very important that your pot is perfectly clean. Professionals use a large saucepan for cotton candywhich is made of pure honey. The bottom is thick and the heat is distributed evenly so that the sugar in the pan melts at the same time.

How to operate the pot

Any pot with a thick bottom (but not enameled or made of yen glass, because they burn easily) will be suitable for this purpose, but you should shake it with light swirling movements. It is good to soak a little sugar if you have no experience with making caramel. The water will soon evaporate and the syrup will melt evenly. Dry sugar crystals will rather stick to the bottom and burn.

How to boil sugar

One of the secrets to successfully making cotton candy is that the sugar has the right temperature, so you need a sugar thermometer. You also need to have some glucose to prevent crystallization. If you use only plain granulated sugar, add a pinch of cream cheese (from the pharmacy) or 1 tsp before cooking. lemon juice. The acid will prevent the sugar from forming crystals that do not melt. It is very important in cotton candy no lumps.

Tools

Make sure you have the necessary tools.

You will need the following: a stainless steel sugar pot or frying pan with a thick bottom, a pastry brush dipped in a bowl of water, a sugar thermometer, a rolling pin, kitchen scissors and a plastic box.

You also need a bowl of cold water, to cool the pot, and something to spin the sugar with (two forks). If you keep the cotton candy for more than a few hours, you will need silica gel (from the pharmacy) to put in the box with it.

Basic method

When you make cotton candy, work quickly to prevent the mixture from cooling and hardening in the pan.

Necessary products

450 g of sugar

3 tbsp. water or glucose powder / 1 tbsp. lemon juice

Method of preparation: Arrange newspapers all over the floor where you plan to do cotton candy. Place a chair near the hob, firmly attach a rolling pin over it so you can easily wrap the cotton candy around it.

Put the sugar in the pan and add enough water to moisten. Heat very lightly until all the crystals dissolve and the liquid becomes completely clear. Do not boil the syrup until the sugar has dissolved. If there are more crystals on the walls of the pot, sweep them with a wet pastry brush so that they can melt.

When the syrup reaches a temperature of 155 degrees, carefully remove the pan from the heat and place its bottom in a pan or basin of cold water to stop cooking. Remove the pan as soon as the hissing stops.

Dip a fork into the caramel, remove and shake to remove excess sugar, then roll with a generous rolling pin.

Repeat this process until you have used up the syrup, or it starts to darken, or you have made enough cotton candy. Cut the ugly lumps with kitchen scissors and shape the cotton candy as desired.

Cotton candy baskets

These baskets are interesting containers for strawberries or ice cream. Dip the fruit halfway in chocolate for even more effect. Make a lot of cotton candy and try to roll each subsequent layer evenly on the rolling pin on top of the previous one. Wrap the sugar slightly around the bottom of the inverted bowl, shaping gently with your hands.

Fillings for sugar baskets

Profiteroles - put in the basket profiteroles with cream and sprinkled with powdered sugar.

Ice cream - use an ice cream scoop to form balls of multicolored ice cream. Put them in the freezer to make them very firm. Just before serving, put the ice cream balls in small pieces cotton candy baskets.
