How exactly this happened - the story is not uniform. This happened sometime around 1700, most likely the time of the first champagne toasts.
Another legend tells of the monk Dom Perignon, who was the man who discovered the process of the second fermentation and thus the way to prepare champagne. Skeptics believe that there are many weaknesses in this version, and even believe that Dom Perignon initially tried to eliminate the bubbles in the wine discovered before him by another. The reason was the continuous breaking of the bottles as a result of re-fermentation.
But in any case, Dom Perignon has gone down in history as the one who understood the benefits of the second fermentation in the bottle and started making wine from it. Dom Perignon is also the first winemaker to make white wine from red grapes. The monk Perignon remains in the history of champagne, which is why one of the famous types of champagne today bears his name. A bottle of Dom Perignon now costs BGN 200, 500, 800, and in some places BGN 1,000 each.
Today there are three varieties of grapes that are used to make the classic champagne - Chardonnay, Pinot Noir and Pinot Magno. In fact, champagne nowadays can only be called a drink produced in the field of Champagne, provided that it has gone through the entire 18-month fermentation process. Other similar drinks are simply called sparkling wine. Today, Champagne produces about 200 million bottles of champagne a day.
