The dishes prepared with duck meat are not very popular on the Bulgarian table. However, anyone who wants to diversify their menu and appreciate the magic of properly selected spices, can go on a culinary journey and compare recipes from around the world to cook duck with an exotic and interesting taste.

However, it is not always so easy to achieve. It is extremely important for this purpose to choose spices that are properly combined and added in the right amount. Root vegetables such as red beets, carrots, parsnips, turnips, fennel, celery are the key to achieving a delicious side dish to duck.

In China, a certain spice mixture of five separate ingredients is often used, which most often comes first with the necessary products in recipes.

To make it at home, we will need: 3 tablespoons of cinnamon, 6 star anise or 2 teaspoons of anise seeds, 1 1/2 teaspoons of fennel seeds, 1 1/2 teaspoons of Sichuan pepper or 1 1 / 2 teaspoons whole peppercorns, 3/4 teaspoon cloves.

All these spices are combined and put in a blender or coffee grinder, then grind finely. The aromatic mixture is stored in an airtight glass jar. It is good to use within two months to make the taste of any dish with it really impressive and intense.

Pre-processed spices can be lightly baked in a pan. Four teaspoons of the finished spice can taste two duck fillets.

Rich in zinc, selenium and B vitamins, meat is also a valuable product from French culinary masters. They prepare it with a sprig of thyme, bay leaf and black pepper. This fragrant trinity dominates all poultry recipes. The taste of the refined chicken broth is due to this combination of spices.

The Mediterranean scent of sea dew, or in other words - rosemary, can be combined very well with duck, but because the spice is too peculiar and dominant, it is not uncommon when it is not friendly in a bouquet of other fragrant plants.

And when it comes to spiciness, we can not bypass the strong character of garlic, combining much better than onions or leeks with this exquisite meat for gourmet dishes.

Mustard, honey and soy sauce are present individually or in combination as a preferred marinade for the preparation of a more tender duck.

And one important detail: always bake duck meat in a high temperature oven; and after removing it, leave it covered with foil for 15 minutes so that its juices can be stored in it.
