It has been proven that after boiling milk, many bacteria die in it, which can be harmful to the human body, but those that are responsible for its fermentation remain. So the first thing you need to do is boil the milk.
The most important moment of the whole procedure is the cooling of the boiled milk. It should be neither too hot nor too cold.
Its temperature should be around 40-45 degrees. You can't imagine melting a thermometer every 2 minutes to find out how many degrees it has cooled.
For this purpose, you can fully rely on your senses and, as our grandmothers say, dip your puppy in boiled milk, and if while counting to five it does not steam on your finger, then you are ready to add the sourdough.
The most suitable sourdough remains homemade yogurt, but still if you do not have one, you can safely trust the milks that are made according to BDS. Take a glass and put a full spoonful of yogurt in it.
Then mix well and add 2-3 tablespoons of milk, which you have previously divided into jars. Stir again and add the sourdough to the jars, making sure it is well dissolved in the milk.
The next step is to wait for the milk to ferment. You don't think that happens in five minutes. Wrap the closed jars in a woolen blanket to prevent further cooling of the milk and leave it for about 3 hours.
Then check it and if it has become thick enough, cool it and put it to harden in the refrigerator, if you do not wrap it for another half an hour.
