Pamid is a wine grape variety that was once extremely popular in the country. Today it continues to be grown, albeit in small quantities. The variety is suitable not only for making wine, but also for direct consumption. It is a typical culture of the Balkans. In Romania it is called roshiora, in Turkey sir chibuk, in Macedonia and Serbia - plovdina, and in Albania - koplik.

The leaves at pamid are painted green. They are large, rounded, pentagonal, covered with moss. The petiole is wrinkled and curled upwards. It is equipped with large, triangular teeth. During the autumn months the color of the leaves changes and they become reddish.

The color of pamid is bisexual. The interesting thing about this variety is that the shoots develop straight up. They then harden into this form. The young and fragile rods are colored yellow. The cluster is not too large, having the shape of a cylinder or cone. It is equipped with a thick wooden handle.

The grain is of medium size, rounded, colored in pink or dark red. It can be very easily separated from the handle. The flesh is watery, but slightly crunchy, pleasant to the taste. It is covered with a thin scale. The fruit of the pamid is used for fresh consumption or for making red table wines. It is suitable for blended grape elixirs. At consumer maturity, the sugar content of the fruit can reach 18 to 24 percent.

Pamid is not pretentious to the soil. It develops relatively quickly. It has high fertility and considerable yield. Pamid is a variety that belongs to the medium-ripening vines. The grape harvest occurs in mid-September. Its positive feature is that it is not affected by drought or low temperatures. But on the other hand, it crumbles easily.

History of pamid

It is said that pamid is an ancient variety that has been grown on the territory of today's Bulgaria for thousands of years. It was also managed by the ancient Thracians. About twenty varieties of the variety are known, and from all of them a light beer wine is prepared, in which the alcohol content is not high. Unfortunately, to date, it is not very attractive to winemakers.

And if in the past it was valuable and until twenty years ago the harvest amounted to about 40,000 tons per year, recently in the year about 7 thousand tons of it are received. Pamid elixirs are not very popular on the market and according to the manufacturers their demand has dropped.

However, wine of this variety can still be found in the home cellar of a small producer who brews beer for personal use only. On the other hand, if it still appears on the market bottled pamid, it is not the light and beer wine that connoisseurs are used to consuming, but a drink that has been forcibly given a higher degree and density.

Characteristics of pamid

Consumption of pamid is a real pleasure for the senses. Pamid wines have a bright red, vibrant and sparkling color, as well as a balanced taste. They are fresh and fruity, and some connoisseurs compare them to French Beaujolais. These table wines should be consumed after fermentation, as aging does not have a positive effect on them. Drinks of this variety are light and drinkable. They do not have a high alcohol content. This makes them the perfect everyday drink.

The pamid is a light wine and should therefore be well chilled before serving. Make sure the temperature is around 12 degrees. Although this type of wine does not shine with aristocratic qualities, it also deserves to be served in a suitable glass. For this purpose you can use a glass for naturally sweet wines. It is made of glass and has a chair. Its volume is not large.

This type of cup has harmonious curves - it expands at the bottom and narrows smoothly to the chair. In its upper part we also have a smaller diameter. The glass for naturally sweet wines allows sipping to take place in small sips and by suction. In this way, the aroma of the drink stands out best. This glass is also suitable for all types of dessert and naturally sweet grape elixirs.

The light nature of the wine predisposes it to be consumed with various foods, including heavier meats. In fact, it has been scientifically confirmed that fruit acids combine best with fatty foods.

That is why you can combine wine with pork dishes. We offer you to combine it with pork rolls, pork kebab, roasted pork fillet, pork with leeks and dock, as well as stewed in Romanian. You can combine the wine with a fresh salad, which includes both sausages and vegetables and dairy products.

In this case, you can opt for a potato salad with ham and olives, yogurt salad with cucumbers, salad with chicken and beans, lettuce with mushrooms and bacon and more. Lovers of this wine can ensure that it successfully harmonizes with most of the dishes typical of our traditional table. You can also combine the wine with some kind of pasta. It's all a matter of personal preference.
