What is Baramundi?
Baramundi, Also known as asian sea bass, is a fish with white meat, with a sweet, soft taste and firm texture. It is native to the Indo-Pacific region and is fished in the regions between India, Southeast Asia and Australia. The word barramundi comes from the Australian Aboriginal language, where it translates as large river fish.
It spends part of its life cycle in rivers and estuaries, so baramundi can live in both fresh and salt water. This means that farmed barramunds can be bred in lakes, freshwater reservoirs that can be located anywhere. Often baramundi is served whole, but can also be filleted.
How to cook Baramundi?
The medium fat content of baramundi facilitates cooking with the help of various culinary techniques, including grilling, oven, cooking, sautéing, steaming and frying. Although sometimes larger specimens can be cut into fish steaks, baramundi is mostly sold whole and in fillets, both without skin and with it.
One of the best ways to preparation of baramundi is to fry in a pan with the skin, as the skin is thin and breaks well. Start by tapping the fillets with a paper towel - this helps ensure a crispy crust. Make a series of shallow incisions in the skin with a sharp knife, not deep enough to penetrate the flesh. Scoring the skin in this way helps your spices to penetrate and prevents the fillet from shrinking and pulling out of the mold while cooking.
Season both sides with salt and freshly ground black pepper. Heat a little butter in a non-stick pan over medium heat and after heating, place the fillet skin side down in the pan. Cook for 2 to 3 minutes until the skin is golden brown, then gently turn and cook on the other side for another 1 to 2 minutes. Remove the fillets from the heat and let them rest for 1 minute before serving.
What does Baramundi taste like?
Asian sea bass has a silky, oily, rich, sweet taste. It has white, medium hard flesh. It tastes and texture similar to sea bass.
Storage of Baramundi
Store frozen baramundi in the freezer and store it completely frozen until ready for use within three months. Leave to thaw overnight in the refrigerator and then cook and serve immediately. Fresh baramundi should be used as soon as possible after purchase for best results.
